Studio Sale Chocolate Chip Cookies

1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1 1/4 cups rolled oats, ground into meal in cuisinart or blender
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 ounces chocolate chips (I like to use bittersweet chips)
3/4 cup chopped walnuts

Cream the butter, then gradually cream in the sugars. Lightly beat the egg with the vanilla nad add that to the butter/sugar. Stir the baking powder, baking soda and salt into the flour, and mix that into the wet mixture along with the oats. When those ingredients are thoroughly incorporated, add the chocolate chips and walnuts.

Roll the dough into golf ball sized balls and place on an ungreaded cookie sheet. Bake at 375 fro 6 to 10 minutes.

I usually make up the dough (multiple batches) several days in advance of my sale and freeze it. Then, the night before the sale I thaw it out and bake the cookies. It rolls nicely into balls when it is cold, and the cookies don’t flatten out too much. These cookies should be soft, not crispy.
