Mike’s Potatoes
Michael Jerry ¼ cup butter
½ cup coarsely chopped onions
3 cups peeled potatoes cut in ½ inch dice
½ teaspoon salt
¼ teaspoon white pepper
½ cup Half and Half
2 tablespoons finely chopped parsley
In an oven-proof casserole heat the butter until the foams and sauté the onions until they are soft. Add the diced potatoes, salt and pepper and pout in the Half and Half. Mix well.
Cover the casserole and place it in a preheated 325 degree oven to bake for 45 minutes. Remove the cover and bake 15 to 20 minutes longer, or until top is brown. Add more Half and Half if the potatoes begin to dry out. Sprinkle with the parsley and serve immediately.
